Shoot to the Cosmos with Homemade Nerds Cosmic Brownies!
Little Debbie may have created the famous Cosmic Brownie, but this recipe takes them straight to the stars! Fudgy and chewy, these brownies will take you back to your childhood.

Ingredients:
Brownies:
142 grams or 10 Tablespoons of unsalted butter
1 cup granulated sugar
1/3 cup packed light brown sugar
¾ cup plus 2 tablespoons of cocoa powder, sifted
½ teaspoon vanilla extract
2 large eggs plus 1 egg yolk
1 tablespoon corn syrup
2/3 cups all-purpose flour
1 tablespoon cornstarch
¼ teaspoon salt
Frosting:
1 ½ cups semisweet chocolate chips
½ cup heavy cream

Instructions:
Brownies:
Preheat oven to 180 degrees C or 350 degrees F
Line a 8 inch square pan with baking paper.
In a microwave safe bowl, melt butter.
Once melted, add in sugar, brown sugar and cocoa powder.
Let cool before adding the vanilla, eggs, egg yolk, and corn syrup.
Stir all ingredients until combined well.
Add in flour, cornstarch, and salt and stir to combine.
Pour batter into pan.
Bake for 25 minutes
Cool completely in pan.
Frosting
In a microwave safe bowl, heat cream on high for 1 minute.
Add in chocolate chips.
Let stand for 3 minutes then stir until smooth.
Pour evenly over the cooled brownies.
Sprinkle the Nerds over the top.
Refrigerate for 1-2 hours.
Cut and serve.
Notes: Can be stored in air tight container for 3 days or 1 week in the refrigerator.
